Adding memory or replacing a hard drive does not void AppleCare. Breaking something while doing anything to a computer voids the warranty. If Apple can find that something you did led to or caused the breakage of items that would otherwise be covered by AppleCare, then AppleCare will be null and void. A significant dent on the exterior of the case can void internal repair coverage by AppleCare.
