This is a good question. I have known people who had (accidentally) dropped their laptops and broken things internally...and AppleCare took care of everything without question. Someone else emailed me and asked specifically about LCDs. I guess the only way to know is to ask AppleCare if it would be covered.
BTW when I drowned my iBook with softdrink, I unplugged the power cord, removed the battery, opened the keyboard, turn upside down pour out gallons of softdrink (well, it seemed like gallons) tried to wipe up any liquid with papertowels and Qtips and then went to dinner. Two hours later, the iBook started up like normal and has been fine ever since. If you ever have a liquid spill, pull the power sources, open it up, sponge it out, and let it dry. (If you aren't sure you got all the liquid out, let it dry overnight or longer.) Macs are amazing machines.
I still say AppleCare is worth it. If a hinge breaks or the cable to the LCD or the LCD just all sorts of little expensive parts are covered by AppleCare.
