Stuffit has strong password protection for its files.

The two options above have the problem of having to start from scratch 
each time and then backing up the entire volume.

Retrospect Express will password protect and encrypt its backup sets. 
This may be the best choice since the backup sets, after the first full 
backup, only backup what has changed. The sets do grow but you can 
start a new one at any time. You can also, I believe, download from 
them files you have deleted from your hard drive after the last backup 
and that were in the backup. Files created after a backup and deleted 
before a backup aren't in the backup set.
