I found some great ideas here: http://www.macdevcenter.com/lpt/a/3192 with regard to centralizing iTunes libraries. For just regular, syncing projects, I use Tri-Edre's Tri-Backup. It's shareware, but works well, is quite customizable, and can be set to run automatically. It runs well in the background on OS X, and works on both OS 9 and OS X.
