Looking for a midi app that can ...

Hey folks .. 

I used to have a midi app on my old old old PC which I loved a lot ..
Besides being able to play the midis and change the tune and speed, I could
change the instruments in each channel or just switch them off (which is
great if you want to do karaoke .. I spare you the details and embarrassing
sound samples) ... 

I have checked out things on versiontracker ... But could not find a feature
that lets me handle separate channels ..

Any ideas ? Thanks
