No, if it's a single file - which it usually is on iTunes - then it's not split. This is indeed a problem with audiobooks; you can burn them onto CDs, but they split wherever they run out of time on a CD. You can't set them to split at chapters. It's pretty much the same with Audbile.com, though many of their books are in a few parts.
