I think the problem with a screen that's "too big" would be that the iBook only allows video mirroring by default (without any hacks installed or anything like that), so a bigger LCD screen that has a greater resolution than the iBook's default of 1024*768 would have to scale itself down to match the iBook's resolution. That resolution would probably look "blocky" and not very pleasant on a screen that's "too large." If you have a chance to see the screens in person, and could plug your iBook into each one to test it out, then you could tell how big is too big for you; I'm sure it's probably a personal preference more than anything else.
