[iBook] Mail: getting rid of unwanted email addresses

Hello;

I've got some email addresses that don't seem to want to go away.  
I'll get rid of them in my address book, but they still seem to be in  
the memory of my To: Field (or where ever they reside).

How can I get rid of them? I have many old, incorrect addresses, but  
they continuously present themselves as valid choices when I type in  
the person's name.
