Keeping tags when re-ripping

I've got an album that I ripped a while ago in SoundJam (RIP), which is 
a bit poppy and slushy so I want to re-rip it in iTunes 4.

When I insert the CD, CDDB comes up with information far more sparse 
than my painstakingly-typed tags (it's a classical CD and , as others 
have noted, these are often not well served by CDDB).

I seem to remember that there's a way of re-ripping while preserving my 
tags, but I need reminding how to do it please.
