[iTunes] iTunes sorting question

How does iTunes decide where to put stuff? I don't do music but  
audiobooks. Most of the books I own are in Music but a lot of them are  
in Audiobooks. None were purchased from the iTunes store.
I thought if I changed genera to Audiobooks that they would be moved  
to that folder but it didn't happen.
A large group of audiobook listeners are curious about this.
