Sam,
The first answer is apple+option+<esc>. This should bring up a dialog box 
warning you that the application will be "force quit", and that you 
should close other apps and reboot
Also, depending on the "stuck-ness" of the application, you may be able 
to use apple+Q to quit the application a little more cleanly.

The other "strange dialog" is the built-in debug routine (the closest 
thing to a command-line in MAC-OS). When you accidentally access this, 
just type "G", and the box will close and you will be returned to 
whatever you were doing. For a detailed explanation of the Programmer or
