I'm currently running 4 monitors with old cards on a Sawtooth G4. Most of the PCI hardware was once used on a Mac 8500.  Mac OS neXt 10.3.9 because I have to replace my SE/30 file server to go higher.

Dual-monitor AGP cards remain expensive even on the used market.
