Actually, you can still choose to work the old way if you want, it's just that now when you "export to iDVD" from iMovie 3, it just pops straight over to iDVD with your existing files, instead of filling up your hard drive with Full Quality DV exports of your edited projects. To "regress" and do things the old way, just choose to Export to QuickTime and use the "Full Quality DV" option -- that's all the "Export to iDVD" option did in iMovie 2 anyway. Then open iDVD on it's own (not through iMovie) and start from scratch. Of course you won't have "chapters" doing it this way, but it's there and it's an option. So at least now there's a choice now of how you want to do things, even if it's not as obvious as before.
