I can't answer your other questions, but iDVD can only compress in two bit
rates - one for under 60 minutes and another for 60-90 minutes. I would take
the over 90 minute videos and split it across two DVDs. That way, you'll get
the higher quality bit rate if you keep each half below 60 minutes.

Can iDVD work in a Sawtooth Mac? IOW, is that a G4 and can you install an
internal DVD-R drive? Those are the requirements for iDVD, and I don't know
any other Mac solutions than DVD-SP.
