Cleaning up from a project

I've finally finished my first real Video project (Christmas 2002).  It's a Widescreen Anamorphic DVD with Dolby Digital 2.0 sound.  I used FCE1 and DVDSP2 to make it.  I've made 4 copies of the DVD, one for my wife and I, and the other three for other family members.

Now it's time to clean up all the files that I have laying around from the project on my Video Capture and Encode HD's as well as any that might be on my internal disk. 

I was wondering if anyone had any advice as to what to keep, should I just blow everything way, or should I keep certain files.  I've done the DVD's such that I should be able to simply copy one if I need further copies for some reason in the future.  I guess it would be a good idea to make an archival copy of the DVD that is set aside as well.
