Get the Canopus.  I've had the ADVC-100 for 2-3 years and have had 
ZERO problems with it.  You plug it in, turn it on, and it just plain 
works flawlessly.  I noticed that Apple is now selling them in the 
Apple Stores.  Though I did see where they've just announced an 
ADVC-110.

Keep in mind the results will only be as good as your source.  Having 
a good VHS deck helps (I'm using a Pro NEC SVHS Deck with mine).

As I believe has been mentioned you can use a Digital Camcorder with 
passthrough to do the same thing.  I prefer the Canopus, you just 
plug it in and forget it, you don't have to unplug it to use your 
camcorder.
