The list isn't very active lately, but there are still people

I've used all the dictation programs for the Mac at one time or the  
other.

On the other hand, transcription isn't something I've ever done. The  
Olympus DS2 is a supported recorder, which is a good start.

The MacSpeech knowledge base might be able to help you, here's a link

These articles will let you know the limitations of transcription (so  
you can check in advance if it will do what you want). Other articles  
help you set up voice profiles for various recorders. The DS-2 isn't  
listed, but maybe the info on the DM-1 or DS-330 is applicable.

I hope this helps. Hopefully you'll hear from someone that actually  
used transcription.
