two mail questions

On my incoming copy of email I have sent the to line is not coming from 
my listing on the address book (my wife instead with a different name). 
How can I change that?

Since Panther the to email addresses are like the group options to not 
show the separate names. Any way to turn that feature off? It's like 
when you have a couple of emails for a person like work and home it is 
hard to determine which one you picked
