I had been wondering about the same issue after downloading a concert 
that was archived on a radio station and came in as one long file. When 
I put the issue to the itunes forum on the Apple site I got this 
solution which I have not tried yet due to the labor that will be 
involved:

You can split the long track into separate tracks in iTunes.
You'll need to write down the start and end times of each track. Use 
the slider to find them.
Then Get Info (command i)
Then click on the Options tab -- from here you can enter the times and 
convert each song as a separate track.
Supposedly it becomes obvious after you do track one.

I would definitely do this on a copy so if I didn't like the 
results.....
