The Xserve only suppports raid 0 or 1

The Xraid supports raid levels: 0,1,5,10,50

yes - but that just means that you can take them out without having 
to shut down the computer.

You may however need to reboot to do some types of maintenance.

The Apple tech docs just don't say.
(unless they have changed them in the last couple of months).
