Hi.

I don't know anything about Postfix, but it sounds like procmail is the 
program you're looking for. I'm not sure if it's currently available 
precompiled for OSX, but if not, you should be able to compile it from 
source, and I think it should run with Postfix, but I could be wrong. I 
do know that procmail is great for processing mail, I use it on my Sun 
mailserver to filter out spam, as well as seperate out my mailing list 
email from my personal email.
