Won't run OSX 10.3 Panther, 10.2 and earlier will run on the G3 desktop,

xpostfacto might let panther be installed on a G3, never used it though.

For a server you're definitely just as well off with a linux or bsd 
distro, eg yellow dog linux, useful site: http://penguinppc.org/
mac-on-linux might also let you run classic without having to reboot the 
machine: http://www.maconlinux.org/
