Panther, Postfix, and Postfix Enabler (http://www.cutedgesystems.com/ 
weblog/Tutorials/PostfixEnabler.html). It includes IMAP* and POP.

If you want a Linux solution to throw on an old PC, take a look at Clark

There are better IMAPs than UW's, but it's adequate for most uses.
