Panther, Postfix, and Postfix Enabler (http://www.cutedgesystems.com/ 
weblog/Tutorials/PostfixEnabler.html). It includes IMAP* and POP.

If you want a inexpensive and easy to use Linux solution to throw on  
an old PC take a look at ClarkConnect (http://www.clarkconnect.com).

There are better IMAPs than UW's, but it's adequate for most uses.
