Panther, Postfix, and Postfix Enabler (http://www.cutedgesystems.com/ 
weblog/Tutorials/PostfixEnabler.html). It includes IMAP* and POP.
If you want an inexpensive and easy to use Linux solution to throw on  
an old PC take a look at ClarkConnect (http://www.clarkconnect.com).  
All of the administration is done via a web interface.

*There are IMAPs I like better than UW's, but it's adequate for most
