[X4U] Overzealous Stuffing

It sounds as though you have "archive via rename" turned on for your 
stuffit installation. Assuming you have stuffit deluxe v.8 or better 
installed on your system (I don't recall if this worked for v.7 or 
not), open system preferences and select the preference pane called 
"Stuffit AVR." Turn off the option to archive via rename and you should 
no longer have the issues you describe.
