All that you have to do is open a single MP3 file in Get Info, change  
the Open With to your preferred application, AND THEN click on the  
button that says Change All.  From then on all MP3 files will be  
opened in your preferred application.

MuchoFileInfo (free)
http://www.muchosoft.com/fileinfo.htm

And use it to change the creator and/or file type info for a batch of  
files so that your preferred application opens those files.
