I sync my calendars and contacts outside of iTunes using MobileMe.  From what I read about the upcoming iCloud You will be able to use it the same way -- plus it will be free.  You could do the same using Google if you have a Gmail or Google Apps account.

Use iTunes for apps, photos, and music.
