Hmm, maybe the documentation is wrong, and that command doesn't do what it seems to say it does. At any rate, when I try to change it, it doesn't seem to affect either Check Mail (which works for me on 10.6.8 with either Cmd-M or Cmd-Shift-M) or New Message. So the mystery continues.
