You could do the encoding with ffmpegX to subsequently burn with Toast
or, assuming that your DVD authoring app (iDVD 5, for example) can write
to dual-layer drives, you could create a disc image file for a
dual-layer (9GB) disc and then shrink it down and burn using Roxio
Popcorn (or shrink it down with something like DVD2OneX and then burn
with Toast).
