Archive and install for recovery?

If you're running Panther is it possible to do another Archive and 
install to basically back out of an update?

I upgraded to bluetooth 141 and I suspect that this is the cause of me 
no longer be able to successfully sync with my Nokia 6600

So, given that the bluetooth upgrades were under

/Applications
/System
/usr/sbin/blued

will an Archive and install replace these?

If I'm not mistaken Archive and install is pretty selective about what 
it will replace right? Will it happy back date things it sees if 
they've since been upgraded?
