When I built my new hard drive, I bought a drive enclosure and a new,
faster hard drive, put the new hard drive in the enclosure, cloned it
(more below), then removed the new drive from the enclosure and removed
the original hard drive and installed the new one into the powerbook. I
then installed the old drive in the enclosure and continue to use it as a
firewire backup drive.

I've used Carbon Copy Cloner in the past and it worked quite well. It's 
shareware (only $5) and can be downloaded here:
