Stephen, Michael, Thomas: I obviously did not realize all of the ramifications of the question I asked! I am sure that I asked the question poorly. My problem really was not concerned with opening ".pdf" files. It really was that if I wanted to print, for example, an email message, and that if I wanted to preview it so that I could print only certain pages of the message, I wanted to do it in the Preview app instead of Reader. When I updated Reader, I had, by mistake, given the default status to Reader instead of Preview. And then I couldn't figure how to give Preview the default status back. Anyway, the Get Info>Open With>Change All method (#3 below) let me change the default at will, both for the problem as defined above, and to define which program opens a .pdf file when its icon is double-clicked.
