X-Apps and printing

Has anyone figured out how to control fonts and print size in cocoa 
apps like Mail.app or X-Code?  I can't get any consistent printing 
results from either of them.  For X-Code, it seems to use the screen 
font for printing and I can't seem to change the print font.  For 
Mail.app and others (even TextEdit), it sometimes prints HUGE text and 
others tiny text.  If I select multiple emails to print, even some of 
those are in different font sizes.  It seems insconsistent.

Am I missing something basic?
