These settings are stored in
Library:Preferences:SystemConfiguration:com.apple.PowerManagement.plist

Do a Get Info on it and see the exact time it was last updated; comparing it
with the system log may give you a clue as to what is going on when it is
changed.  

You might also try locking this file in the Finder, and then restarting.
This may prevent its being changed.
