About a year ago, I tried to get a Sprint phone that would act as a modem for my 600 Mghz iBook, so I could use it to log on and get my email when I was away from a landline, but Sprint maintained they had no phones with this capability, which is pretty much what you're looking for, I think. Recently I asked about a bluetooth phone to hook up to my new PowerBook, and they had nothing here, either. But if it's just faxing you want, there are several Internet-based fax services that will let you send and receive faxes the same way you currently do emails. I don't remember the names offhand, but a Google search will find them for you. Will that kind of system work for you?
