I've connected my iBook to the variety of (VGA-based) projectors in conference rooms where I work, and get a picture. One tip that might help is to start System Preferences, click Displays, and check "Show displays in menu bar" -- that will let you select the resolution that works best with the projector without having to start System Preferences while you're getting ready to start. Often, you can ask for a few minutes to "get set up" before the clients actually enter; this gives you time to set up the projector, start your presentation, distribute materials (if you use them), and determine whether you have any contingencies to deal with.
