A couple ways you could handle this:

- Leave the Full Name field blank and enter something like this in the
Email Address Field:

John Doe <jdoe at apple.com>, Jonathan Doe <jdoe at mac.com>

- Leave the second account always configured, but either deactivate it
or turn off automatic fetching for the second account (both prefs are
in the Advanced tab).

Via Applescript, only, not using the Import Mailboxes command. Sadly,
most other email clients aren't scriptable enough to support scripting
the data from rules and signatures. So, Mail has the support to do this
via Applescript, but it's not as useful as it could be due to the lack
of support from other clients. Doing such an import would involve some
reverse engineering of proprietary data formats.

Address Book will also import vCards (via drag and drop) if Day-to-Day
supports vCards. There is no generic tab-delimited importer in Address
Book or the script.

You are probably pushing the limits with 2 gigs of email. Other than
keeping more mailboxes with a smaller set of messages (and using
multiple selection if you want to see multiple mailboxes at a time), I
don't really have a good suggestion here other than trying out a more
high-end email client like Mailsmith or Entourage.
